Paranaque CENRO Receives Training on Bottled Tahong Processing
Mussels (tahong) is an abundant resource in Paranaque City and has a potential of providing additional livelihood opportunity for the fisherfolks in the Fisherman's Wharf in Brgy. La Huerta. Thus, the DOST-NCR, in partnership with the Local Government of Paranaque, organized a Training of Trainers (ToT) for members of the City Environment and Natural Resources Office (CENRO) - Community Relation and Information Division on Basic Thermal Processing for Bottled Gourmet Mussels on March 23, 2022.
Engr. Rogelio B. Prospero, Head of the DOST-NCR Food Safety Team, imparted best practices and techniques on the preservation of bottled tahong through thermal processing. He also shared safe food handling and the importance of sanitary practices to increase the shelf-life of gourmet mussels.
Moreover, the Local Government established a common service facility for fish processing, with gourmet tahong as one of its potential food products. The DOST-NCR also provided plant layout assistance on the said facility.
A total of 21 CENRO members participated in the in-person training. They will serve as trainers on tahong processing in support to the City's initiative to provide alternative livelihood opportunity for its women's group and fisherfolks.
